Travelling through the hectares of the Clos of the Thermes, you will feel the changing colour and nature of the soil.
You will walk first on a "gravette" which cracks under your steps, then on clays sprinkled with fragments of chalky rock. With a little chance, you will discover maritime fossils.
During the glorious times of Ambrussum, in the Ancient Rome, "Cella Solaris" designated the room of warm bath.
This clos, has also the advantage of keeping the heat. The southerly exposure and the geological composition give to shingles a particularity. They accumulate the solar radiances during the day, and they release it to the vine during the night.
This phenomenon thus permits to the grapes reach easily its full maturity.
For the favourable vintages, the harvest is made on over-maturity stage, with the aim of making the Cuvée Les Thermes d'Ambrussum.
