Situated close to Montpellier, La Croix Saint
Roch covers 30 ha. A mission cross established
in 1884 symbolizes the entry of the estate.
Mr Boissier is very concerned about the
preservation of the terroir of Saint Sériès.
He applies thus a viticulture of precision,
where each parcel receives a personal program.

Jean -Pierre BOISSIER set up in 1986, and
created a mini revolution with the winemaking
of a natural Muscat. Indeed, the presence of
alcohol and sugar are exclusively the result of
the grape. A late harvest gives the grapes time
to an over-ripe, to be dried by over-maturation,
with the aim of obtaining a sufficient
alcoholic potential.

 

In the XIII century, the Order of Malta carried
out an official demarcationof estates. The vines
of the estates still bear withness to this.
Cultivation method are realised to preserve the
biological activity of the soil and to respect the environment : natural vegetation, reasoned
protection, addition of compost...

 

When he arrived at La Croix Saint Roch,
Jean-Pierre Boissier stopped go to the wine
coop in order to reactivate the family winery.
He invested every year with the aim of adapting
his equipments to the requirements of modern
wine-making : stainless-steel tanks, pneumatic
press, generator cold, press filter, de-stemmer...
